1. To develop consistent and acceptable product formulations of a smoked trevally roe pate in retortable jars.
2. To test product formulation/s acceptability with a range of Australian consumers.
3. To determine the processing FO, salt content, water activity, protein level of fatty acid (omega 3) contents of acceptable formulation/s and subsequent product cost structure.
