Structural understanding of the degradation of glucose polymers. Understanding starch and glycogen breakdown at the molecular level is important for human nutrition and health. The understanding from this project will lead to new means for the control and mitigation of nutritional diseases, such as diabetes and obesity, as well as improved foods.
Mechanism of synergy of ingredients in natural products and functional foods. Synergism is the interaction of two substances to produce an effect larger than the sum of the separate effects. This project aims to determine the basic biological mechanisms or molecular targets by which the synergy is occurring and to identify the bioactive compounds involved. The project will use equipment and theory, developed in Australia, to create the first understanding of the characteristics that govern the performance of complex polymers as emulsifiers. The insights so gained will be a key step towards developing improved modified starches for the food and other industries.
