    Identification of nutritional bioactives in tropical fruit. Information on the nutritional properties of tropical fruits is currently limited to chemical analysis of vitamins, minerals and fibre. This project aims to identify additional nutritional components within tropical fruits by assessing activities against a range of cell-based assays. Selected assays will represent cellular processes relating to e.g. lipid metabolism, cancer prevention, and antioxidant effects. Assay-based fractionation .... Identification of nutritional bioactives in tropical fruit. Information on the nutritional properties of tropical fruits is currently limited to chemical analysis of vitamins, minerals and fibre. This project aims to identify additional nutritional components within tropical fruits by assessing activities against a range of cell-based assays. Selected assays will represent cellular processes relating to e.g. lipid metabolism, cancer prevention, and antioxidant effects. Assay-based fractionation approaches will be used to identify molecular bioactives acting either alone or synergistically with other components. Results will be used in public health and/or marketing communication, and will provide targets for breeding and varietal selection programmes.

To improve health and wellness, micronutrients must be in a palatable form and be sufficiently absorbed to improve nutritional status. To optimise stability during processing, sensory quality and metabolic absorption, appropriate micronutrient food fortification technology must be used. This project proposes a unique linkage between three distinct University faculties and Industry, to combine the development of novel fortified dried-vegetable and/or fruit leathers with an efficient process for their production, nutritional studies to assess their absorption, and target market (young children) acceptance studies.

A higher flavonoid intake has been estimated to reduce the risk of cardiovascular disease by about 20%. Apples are important sources of flavonoids in the diet. The proposed project involves collaboration between the Department of Agriculture and Food Western Australia and the University of Western Australia. The aim is to identify progeny of both the apple and plum breeding programs that have elite levels of flavonoids and to demonstrate health benefits of a high-flavonoid apple. This could lead to significant benefits to Australian horticulture and to population health.

Here, the WA Table Grape industry has committed funds for an APAI to study regulation of antioxidants in relation to nutritional and postharvest qualities. Effects of preconditioning with mild oxidative stresses will be assayed, postharvest, using molecular and biochemical techniques.

The aim of this project is to examine the effect of price and perceived quality on the type and quantity of fruits and vegetables cons .... The importance of price and perceived quality to the demand for fresh fruits and vegetables. It is estimated that the direct and indirect cost of diet-related diseases to Australia is between $2-3 billion per annum. One of the most important things that can be done to prevent diet-related disease is to encourage the population to eat more fruits and vegetables. The aim of this project is to examine the effect of price and perceived quality on the type and quantity of fruits and vegetables consumed, especially among low-income households. The project will employ modelling techniques that are novel to this product group and that will provide valuable insights to the constraints and opportunities for increasing fruits and vegetables intake, as well as benchmarks for future research.
