This research should significantly broaden our understanding of the behaviour of legume protein-phospholipid complexes and their contribution to malodorous flavour development. The expected outcomes are protocols to prevent undesirable sensory characteristics in liquid foods. This should benefit the food industry by improving the sensory attributes of beverages enriched with legume protein, leading to the creation of novel, highly nutritious products with superior sensory attributes and long shelf-life.Read moreRead less

One of the main impediments to increased use of wrought magnesium is its characteristic but mediocre mechanical properties. The proposed work paves the way for new improved wrought magnesium alloys by determining how the constituent nano-structures, micro-structures and deformation conditions can be manipulated to control the evolution of properties during annealing. The project will deliver mathematical models describing the annealed microstructure and mechanical properties. The work will also explore the potential of a recent discovery made by the CI of a simple technique to randomise the alignment of the annealed atomic lattice structure, which promises to markedly improve formability.Read moreRead less
Modelling twinning transitions in light metals: a new foundation for alloy and process development. Australia's quest to become a world leader in light metals technology is being held back by a lack of quantitative understanding of the metallurgical behaviour of magnesium, which is the lightest engineering metal, and titanium, which is the strongest light metal. In particular, there is poor knowledge of the influence of material parameters on deformation twinning. This knowledge is vital for efficient production and optimised alloy and part design. This proposal aims to develop a quantitative understanding of transitions in twinning activation for improved performance in fatigue, crash behaviour, structural integrity, forming, forging, extruding, hot rolling and annealing.Read moreRead less
The development of lead-free silicon brass for the plumbing industry. The worldwide brass industry is currently undergoing a transition away from lead-containing brass water fittings to lead-free fittings. The transition is driven by concerns surrounding lead-leaching into drinking water. This project is focussed on the development of new lead-free brasses that can be used to manufacture plumbing fittings with superior combinations of processability, performance and cost.

This will provide the first tools to readily measure the full size distribution of starch in industry laboratories, giving far more information than is currently accessible. The data will be extremely sensitive to structural characteristics associated with desirable end-use properties. The new process will enable conventional instrumentation methodology to be re-engineered to better select starch-containing materials. This will enable superior targeting and processing of materials for improved products in human nutrition, animal feed and manufactured goods such as biodegradable plastics.Read moreRead less

An important operation in the food industry is the physical separation of valuable particles from a mixture containing waste materials, such as shell fragments. The purpose of this study is to investigate the application of a novel gas-solid fluidised bed system, utilising parallel inclined plates to radically amplify the differential segregation rates to produce separations based on particle size. Our aim is to develop a fundamental understanding of the principles governing the nature of this system. The project should result in considerable technological and economic benefits for the food industry, a well trained and educated person at the postgraduate level, and a stronger collaborative link between the University and Sanitarium.Read moreRead less

We propose to develop a novel continuous extrusion process for manufacturing confectionery jellies. Jellies are traditionally manufactured in a multi-step labour and capital-intensive batch process with inter-batch variability and difficult to automate. Continuous processes offer many advantages including high throughput, efficiency, straightforward automation including quality monitoring and control. They are little used in this industry because of the inability to relate product requirements through fundamental microstructural properties to processing conditions. This project addresses these key technical obstacles to gain the competitive advantage of continuous extrusion processing, through advanced mathematical modelling informed by experimentation. The proposed techniques derive from advanced polymer processing and characterisation capabilities.Read moreRead less
