    The effect of dietary fish peptides on biomarkers of human health - the influence of processing conditions and the environment. This project links together two diverse but important areas of national importance: declining fisheries and human health. Australia is a small producer and exporter of fish but has access to significant fisheries. The Geelong Food Co-product Cluster comprises a number of fish companies facing serious problems associated with declining catches compounded by the current f .... The effect of dietary fish peptides on biomarkers of human health - the influence of processing conditions and the environment. This project links together two diverse but important areas of national importance: declining fisheries and human health. Australia is a small producer and exporter of fish but has access to significant fisheries. The Geelong Food Co-product Cluster comprises a number of fish companies facing serious problems associated with declining catches compounded by the current financial crisis. Increasing use of by-catch species and developing novel processing technology for controlled release of bioactive peptides that may reduce appetite and the tendency for overweight and obesity in consumers could provide the Australian seafood industry with a world competitive innovative technology leading to improvements in human health.

    Summary
    Development of novel omega-3 enriched poultry products. New Health recommendations and changes to the Food Standards Code encourage greater dietary intake of omega-3 (w-3) fatty acids. Our core research on modifying fatty acid composition of poultry tissues and preliminary studies with our industry partner's proprietary fishmeal product (PorcOmega) have indicated the feasibility of producing novel meat products and eggs with high w-3 contents, which would qualify to carry a new nutrition label. .... Development of novel omega-3 enriched poultry products. New Health recommendations and changes to the Food Standards Code encourage greater dietary intake of omega-3 (w-3) fatty acids. Our core research on modifying fatty acid composition of poultry tissues and preliminary studies with our industry partner's proprietary fishmeal product (PorcOmega) have indicated the feasibility of producing novel meat products and eggs with high w-3 contents, which would qualify to carry a new nutrition label. We now propose, in collaboration with our industry partner, to assess the viability of producing such products by conducting poultry feeding trials with PorcOmega on a commercial scale and evaluating both the levels of w-3 enrichement of chicken breast, thigh and sausages, shelf-life and consumer acceptability (sensory evaluation) of these products. We expect to establish feeding strategies for adoption by commercial producers of premium poultry and eggs for local or export markets.

    Nanostructured dairy powder for improved functionality. More than 30 per cent of the total milk produced in Australia is converted to powder for export. This project will lead to improvement in the solubility, and hence shelf-life, of protein rich dairy powders which will be of significant economic benefit to the industry. This project will also benefit the wider scientific community in dairy and food sectors.
