Development and evaulation of novel foods enriched with very long chain omega-3 fatty acids. This project is a collaborative effort between Meadow Lea Foods, Clover Corporation, and the Universities of Wollongong and Western Australia. Australia has very limited wild fish supplies, and with the increasing realization of human health benefits of fish (i.e. omega-3 fatty acid) there is a need to increase availability through aquaculture. However, feeds used in aquaculture contain costly fish oil with limited global supplies. Attempts made to substitute fish oil with vegetable sources in aquaculture feeds have been mixed. The effect of de-gassing on the dispersion and stability of emulsions and colloidal solutions. Although it is widely accepted that oil and water will not mix, the reverse has recently been found to occur (by the applicant) under the unusual conditions of complete de-gassing. This discovery has opened up new areas for investigation and for the development of new processes and products. Hydrocarbon oils and hydrophobic powders can now be readily dispersed in water without the use of additives. Extraction of flavour enhancers, antimicrobials and nutraceuticals from olive mill effluent. The project aims to recover valuable materials from olive mill waste. Natural flavours will be recovered from the wastewater and from the dry pomice after oil extraction. The research and development will see these flavour compounds added back to olive oil to enhance the flavours of bland oils and to increase the shelf life of olive oil. Expanding the gene pool of canola (Brassica napus) by introgressing valuable genes from related species. Canola is a high value export crop from Australia, and an important rotational crop which improves sustainability of agriculture through a disease and weed break for cereal crops. While breeders have improved quality, disease resistance and adaptation of canola to Australian conditions over the past 30 years, this has reduced genetic variation to dangerously low levels. When water encounters a hydrophobic surface - at the air/water interface, in contact with unreactive solids such as Teflon, or at an oil drop, our recent experiments indicate that the water dissociates more readily into protons and hydroxide ions - undergoes autolysis - than in bulk water.
