Understanding and Controlling Wall Deposition in Spray Dryers via Experimental and Computational Fluid Dynamics (CFD) Studies. A key problem in operating spray dryers for producing milk powders and other consumer products, such as detergents, is the occurrence of internal wall deposits of powder, leading to thermal degradation of the products and potential fire hazards. However, no fundamental theory has been applied in spray dryers to allow this process to be controlled. The proposed project will use state-of-the-art experimental and computational techniques to gain a fundamental understanding of this phenomenon and will develop a validated wall deposition model to predict when and to what extent this process occurs, to give higher throughputs and/or more efficient systems.Read moreRead less
Ultrasonic Processing of Dairy Ingredients to Control Protein Aggregation and Promote Heat Stability. This project is an emerging collaboration between the University of Melbourne, Food Science Australia and the Dairy Ingredients Group of Australia. We aim to use acoustically generated chemical and physical effects to modify dairy proteins. Transformation of the sulphur-containing proteins by this means should overcome many of the difficulties currently encountered in thermal processing of whole milk and whey proteins. This work will place the Australian dairy industry in a pre-eminent position for the development of valuable, heat-stable and uniquely functional ingredients based on novel micro/nano structures. Existing world class expertise will be further developed in ultrasonic processing and sonochemistry as frontier technologies.Read moreRead less

Economic: new cultivars developed from understanding betalains will sell worldwide, generating returns, incomes and employment in urban, peri-urban and rural Australia. Social: Novel Ptilotus and Calandrinia cultivars will adorn parks and gardens around Australia, thereby enhancing quality of life. Environmental: Ptilotus and Calandrinia are inherently drought resistant. Novel ornamental cultivars will have high water use efficiency and contribute to water conservation in urban Australia in the face of drought and global warming. Moreover, understanding their synthesis and roles could yield new strategies for enhancing stress tolerance in other species, including crop plants.Read moreRead less

Ultrafiltration of whole milk solutions will be extended to maximise the product protein concentration. Electrodialysis and nanofiltration will be tailored to separate salts from lactose and produce 'designer' products with minimum wastage and energy consumption. Production of lactitol from dairy lactose, a potential new manufacturing operation for Australia, will be assessed. This project will result in diversion of quality ingredients from commodity markets to products with significant added value. The Korumburra region will benefit financially and socially from expansion in the local dairy industry.

The mature oocyte contains dominant factors that are capable of erasing tissue specific gene expression profiles of somatic cells. These reprogramming factors would be valuable for dedifferentiation of cells and for nuclear transfer in animal cloning. The research involves determination of reprogramming factors present in active cytoplasm following enucleation of the germinal vesicle, blockage of transcription and translation, and timed cultures. The assays will involve maintenance of reprogramming ability and erasure of somatic gene transcription. By subtractive elimination the function of isolated proteins which are involved in reprogramming will be identified for potential recombinant production.Read moreRead less
Topical peptide delivery for cosmetic and therapeutic benefits. Milk is a major Australian agricultural commodity and is now used in a number of topical products for the management of various skin conditions including chafing in babies, eczema and ageing skin. Hence, this work hopes to contribute to promoting and maintaining good health of Australians.

Milk is a major Australian agricultural commodity and is now used in a number of topical products for the management of various skin conditions including chafing in babies, eczema and ageing skin. Hence, this work hopes to contribute to promoting and maintaining good health of Australians.
In addition, there is considerable research being conducted on peptide development for a range of diseases and there may be a possibility of delivering these by the skin.
This work, in seeking to understand some of the fundamental determinants governing how exogenously applied peptides distribute in the skin, is also contributing to the development of Australian pharmaceutical and cosmetic industries.Read moreRead less
The Molecular Mechanism of Protein Instability in Dairy Powder Systems. Dairy is the fourth largest rural industry sectors in Australia, directly involving more than 13,000 farms and a large number of dairy factories. The anticipated improvements in the performance and shelf-life of the dried dairy powder systems to be investigated in this project have the potential to generate significant economic impacts in both the dairy production and processing sectors. This work will also benefit the wider scientific community in dairy- and food-related areas, particularly in relation to the novel multidisciplinary approach involving a combination of material science and protein chemistry.Read moreRead less
